Many food companies claim to use only the "finest ingredients." At Brent & Sam's, we really do use only the best, no generic commodity-type ingredients for us. We use brand-name butter and margarine, brand-name sugars and vanilla extract. Most cookie companies just go shopping for the cheapest ingredients. Not Brent & Sam's.
Pecans, for example, can be purchased in four or five different "grades." We use only the top-of-the-line, called "fancy" grade. Chocolate chips come in various sizes. We use the larger ones, even though they are a little more expensive. Most importantly, we have a higher ratio of "inclusions" than you will find in any other cookies: more chocolate chips per cookie, more pecans, macadamia nuts, raisins, etc.
On top of that, we slow-bake our cookies at a lower heat than most other companies. We could bake more cookies quicker, baking at high temperatures, but we've learned over the years that that does not produce the most flavorful cookie. Therefore, we just don't do it.


n 1922, Felix Schlosser, the founder of Morrilton Packing Company, immigrated to Little Rock, Arkansas from Germany. While living in Little Rock, Felix worked for Little Rock Packing Company and for Becker Packing Company. He then moved to Conway, Arkansas for a short time where he was employed by Erbacher Packing Company. In 1926, Felix finally settled in Morrilton, Arkansas where his widowed cousin, Mary Ruff, was living, and where he opened a retail meat market in partnership with Ellis Bentley. Soon after, in the early 1930's, the Petit Jean brand was adopted.

Waterfall Hollow Farm is truly “a tiny company”* and you get personal service when you order from us! The pastures have been managed organically since 1981, when Dave and I moved back to my family's farm after college. We started the first direct-marketed grass-finished beef business in the region back in 1995, under the name "Waterfall Hollow Farm's Natural Beef", which evolved into "Waterfall Naturals Pasture-Finished Beef" about ten years ago.
