Now we continue that tradition in this country, on our state-of-the-art dairy where cow comfort is our primary concern. Our dairy has received national recognition for our innovative ideas, extraordinary milk quality, and environmental and animal welfare concerns.

Fiscalini Farms was among the first dairies in California to be certified by the California Dairy Quality Assurance Program for environmental responsibility, and was the first dairy in the nation to be certified by Validus for compliance in animal welfare issues. We passed both third party inspections on our first try.

You can taste the freshness of the milk in our cheeses because the milk is only minutes old when the cheese is made. Made from our dairy farm's Grade A milk, only from the morning milking. Karoun Cheese

Karoun Cheese

Karoun, which is Armenian for "springtime", was the name of the family factory in Beirut, where Ohannese Baghdassarian specialized in yogurt before developing cheese-making skills. Almost anyone from that part of the world will recognize the name.

When Anto Baghdassarian and his family moved to the United States in 1989 he was faced with the challenge of developing his cheeses from scratch. He says: "Making Near Eastern-style cheese with California milk was like reinventing the wheel. The cultures and techniques had to be tailored to our milk."
